- 2 cups corn whole kernel
- 1/4 cup Red Bell Pepper diced
- 1/4 cup Green Bell Pepper diced
- 1/2 cup onions, green, red and yellow, mincedÂ
- 1/4 cup tomatoes, minced
- 1/4 cup jalapeno peppers
- 2 tablespoon lime juice
- 2 tablespoons Cilantro
- 2 teaspoons sugar
- 1 tablespoon Apple Cider or Red Wine Vinegar
- 1 tablespoon olive oil
- 1/4 teaspoon Cumin
- 1/4 teaspoon Cayenne Pepper
- Salt & Pepper to taste
